Aloo Gobi Capsicum Fry



Its my all time favorite with plain curd rice. I just love it n here goes the recipe.Its going for Side Dish Event hosted by Easy cooking.
Ingredients
  • 1no - Potato(cut lenthwise)
  • 1/2cup -Cauliflower(cut into small florets)
  • 1/2cup - Capsicum
  • 1/2cup - Onion
  • 2tsp -Tomato Puree
  • 1tsp -Ginger Garlic paste
  • 1tsp -Cumin seeds
  • 1/2tsp -Mustard Seeds
  • Red chilli Powder - As required
  • 1/2tsp - Turmeric Powder
  • Salt - As required
  • Oil - As required
Procedure

Microwave the Potato n cauliflower separately till it turns tender n keep aside.

Heat the oil in pan,add mustard seeds,when splutters add cumin seeds ,onion n capsicum,fry till it turns transparent.

Add ginger garlic paste,stir for few mins then add tomato puree n fry till raw smell goes off.
Add all the Powders n mix well.Now add the potato n cauliflower n stir well so that the masalas will coat potato n cauliflower,do it in a low flame.

It goes good with chappathi, n plain curd rice.

Strawberry Milkshake

Most Ppl love Strawberries,and many recipes can be made using this fruit.Its very nutritious n rich in Vitamin C.Strawberries dipped in whipped cream is a good combination to have.Here goes my one of the simple n delicious Strawberry Recipe.This goes for Chandrabhaga's RD for Summer Event.

Ingredients

  • 1Cups - Strawberries
  • 1 1/2Cup - Milk(i use 2% milk or skim milk)
  • Few almonds - Optional
  • Sugar - As required

Procedure


In a Blender put the above all ingredients n blend till it turns smooth.

Pour in glass n serve.

Note1

If you want add whipped cream on the top while serving.

Kadai Chicken


Ingredients
  • 1 1/2Cup - Chicken pieces
  • 2nos - Onion(finely chopped)
  • 1/2Cup -Tomato Puree/Finely chopped tomato
  • 1/2Cup -Bell pepper
  • 2nos - Green chillies
  • 1tsp - Garam masala Powder (or) Whole Garam masala
  • 2tsp -Ginger Garlic Paste
  • 1/2tsp - Turmeric Powder
  • Red chilli Powder - As required
  • 1tsp - Cumin Powder
  • 1tsp -Corriander powder
  • 2tsp -Curd
  • Salt - As required
Procedure

Clean the chicken in hot water n marinate with salt,Curd,turmeric n red chilli powder and keep aside for 20-30mins

In a kadai heat oil add the whole garam masala,onion n fry till the onion turns transparent,add Ginger-garlic Paste n fry for few mins.

Add tomato puree,green chillies,Bell pepper n fry till the raw smell goes off,then add corriander-cumin powder,red chilli powder n mix well.

At last add marinated chicken and cover n cook in a low flame till the gravy becomes thick/ chicken becomes tender.

Gransih with Corriander leaves.

Serve hot with Rice,Biriyani,Naan,chappathi n parathas.

Omelette

Ingredients
  • 2nos - Eggs
  • 1/4Cup - Onion (finely chopped)

  • 1/4Cup - Tomato(finely chopped

  • 1/4Cup -Corriander leaves(finely chopped)

  • 1/4tsp - Cumin seeds (optional)
  • Salt - As required

  • Pepper Powder - As required
  • 1/4tsp - Red chilli powder

Procedure

In a bowl,beat the eggs,add the above all ingredients to the beaten egg n mix well.

Heat the tawa,apply little oil r ghee ,pour the egg mixture in the tawa

when its cooked one side,turn it over to cook other side.

Its good with tosted breads,corrisant and rice varities.

Sambar

Ingredients
  • 1/2Cup - Toor Dhal
  • 1Onion - Finely chopped
  • 2Cups - Veggies ( carrot/potato/Brinjal/Drumstick/Beans) of ur choice
  • 1Cup -Tomato
  • 2nos - Garlic cloves
  • 3tsp - Tamarind Extract
  • 2tsp - Sambar Powder
  • 1/4tsp - Turmeric Powder
  • Red chilli powder - As required
  • A pinch of Hing
Seasoning
  • 1/2tsp - Mustard seeds
  • 2nos - Dry chilies
  • Few Curry Leaves
  • 1tsp - Channa dhal
  • 1tsp - Urad dhal
  • Corriander for granishing

Procedure

Pressure cook the dhal along with garlic n turmeric powder and keep aside.

In a pan heat the oil,add onions n fry till it turns transparent,then add tomatos.

Now add all the powders n veggies of ur choice along with 1/2cup water stir well n close the lid.Let it cook till the veggies turns tender n soft.

Add the tamarind extract stir well n leave it for few mins.

At last add the cooked dhal along with water(2cups or as required),stir well n bring to boil.

In a seperate pan heat the oil,add mustard seeds,when it splutters,add the seasoning ingredientsexcept corriander leaves n fry for few mins.

Pour the seasoning into the sambar n Granish with corriander.

Note
Its goes good with Dosa varities,Rice,Pongal.

Onion Rava Dosa

Ingredients
  • 1Cup - Rice Flour
  • 1Cup - Sooji
  • 1/4Cup - All purpose flour/Maida

Seasoning

  • 1Onion - Finely chopped
  • 1/2Cup - Corriander leaves Finely chopped
  • 2tsp - Cumin Seeds
  • 1/2tsp - Mustard Seeds
  • 2nos - Green chillies finely chopped
  • Salt - As required
Procedure

Mix the Rice Flour,Sooji n maida flour,add water n salt to it.

It should be watery,buttermilk consistency,n Keep aside for 15mins.

In a meanwhile Heat 1 tsp of oil in a pan, add mustard seeds, when it splutters add cumin seeds,onion,green chillies,n corriander leaves.

Fry till the onion turns transparent.

Add this to the batter.

Heat the tawa, take one ladleful of batter and spread on the tawa starting from the sides to the centre.It cannot be done as odinary dosa. Apply oil Or ghee on the sides. When it becomes golden brown turn it over.

It goes well with sambar n Coconut chutney.

Murukku

Its a very famous snack in southern part of india.Normally in TamilNadu ppl will do sweets and murukku during diwali time.My Mom n my GrandMa used to do this.It invloves a lot of patience.Its been a long time i did murukku. Yesterday i feel like having,but lazy to prepare as its a time consuming process,at last in evening i set my mind to prepare the delicious snack,but still i did in my own shape/ style :-) Here goes the recipie.


Ingredient
  • 2Cups - Rice Flour
  • 1/2Cup - Urad dhal flour
  • 3/4Cup - Roasted channa (Pottukadalai) Grind thm into fine powder
  • 1/2Cup - Melted Butter
  • 6tsp - Seasame seeds
  • 1tsp - Cumin seeds
  • 1tsp -Ajwain seeds
  • Red chilli Powder - As Required
  • Salt - To Taste
Procedure

Mix the above all ingredients along with little water.

Knead the mix to make a soft dough.

Using murukku maker pipe out the patterns (there will be a lots of patterns,u can choose as per ur wish) in a plate.

Heat oil in a medium flame,drop the murukku patterns from the plate to Oil.

Fry till it turns gloden brown.

Remove from oil and place it in a paper towel to drain the oil

Allow to cool n store it in a air tight container

Enjoy with evening Tea.

Simple Homemade Pizza

Ingredients
  • 1Cup - All Purpose Flour
  • 1tsp - Active Dry Yeast
  • 1/2tsp - Sugar
  • Salt - To taste
  • 1/2 Cup - Warm Water
  • 1 Cup - Mozzarella cheese
  • 1/2 Cup - Pizza sauce/Pasta sauce/Salted Tomato sauce
  • Toppings - Onions,Jalapeno,Broccoli,Sliced Tomato,Bell Peppers
  • 2tsp - Olive Oil
Procedure

In warm water add dry yeast,sugar n salt and keep it aside for 10 mins

Mix the yeast water into the flour along with the olive oil and knead the flour to get soft dough

Cover it n keep aside for 40 mins.

After 40 mins Knead again and keep it for 30 mins

Now take the dough and roll/stretch it into circle

Once the Pizza base is ready,spread the sauce(pizza/pasta/tomato) in the base.

Top with Onion,Jalapeno,Broccoli,sliced Tomato,Mozzarella cheese n Bell Peppers.

Bake it in oven (350 deg) for 20 mins or untill the base is golden brown.

Note: Toppings can be added as per you like.
